Congratulations to Claire Griffin, who has come 3rd in the ‘Green Isle Schools Recipe Challenge’, for Transition Year students.
Claire's brief was to create a delicious healthy recipe, that would help people to reach their 5 a day.
The recipe had to include at least one Green Isle product, and a brief description of her dish.
With over 100 students entering & 78 different recipes using Green Isle fruit or vegetables, this is a massive achievement.
Claire's Dish
Homemade vegan pea and spinach ravioli, (using Green Isle spinach & petit pois) with
Chimichurri sauce, served with Green Isle Country mixed vegetables.
Claire has won a voucher to the value of €200:00 for the Home Economics Department, she will receive an apron and a certificate for her fantastic achievement.
This is Claire’s 3rd successful competition within the last 9 months.
Winner of Fyffes Bananas Baking Competition,
Second in Senior Category, of The Kenwood Chef Baking Competition, and now,
Third in The Green Isle Schools Recipe Challenge, for Transition Year students.
