6th year Agricultural Science students visited Macroom Buffalo Farm today. Macroom Buffalo has Ireland's first and largest herd of free roaming, grass fed Water Buffalo.
We got a fantastic tour of the farm, led by the passionate and informative guide, Dorothy O' Tuama. She shared insights into the history of water buffalo farming in Ireland and how in 2009, they took the plunge and imported 31 buffalo from Northern Italy and now have over 700!
Students enjoyed meeting the friendly calves and docile mothers as well as learning about animal husbandry, cheese making and sustainability.
The trip concluded with a tasting session featuring fresh mozzarella, ricotta, burrata, Cypriot grilling cheese and even some buffalo burgers. The rich, creamy flavours of the cheese were a testament to the farm's dedication to quality.
To top it all off, Mr. Shanahan put his culinary skills to the test and whipped up a delicious ricotta lemon curd cheesecake which was a hit with everyone!
